Having harboured dreams of opening a restaurant since the age of 10 (ranging from tapioca chips stalls to world domination with an international dosa chain), Sibi quit his IT consulting job in Singapore to join his classmates from high school in Bangalore to set up one of Bangalore’s first microbreweries. With Toit now in Bangalore, Mumbai and Pune and The Permit Room in Bangalore, there has been no looking back. Sibi’s IT acumen helps handle all the operational complexities of the restaurant and craft beer business.
